A south-east-facing hillside on deep clay-limestone soils at the foot of Puy Notre-Dame. A plot whose name recalls the religious past of the place — once belonging to the chapter of canons. Here Chenin yields ample, fleshy wines, balanced by a saline freshness.

Manual harvesting at optimal ripeness. Long pneumatic pressing. Cold settling by decantation. Spontaneous fermentation in old oak barrels. Bottling without fining or filtration.

The Coteau du Chapitre is where I go when I want to understand what the vine is telling me this year. The Chenin Blanc grown there yields fleshy, almost sun-kissed wines, but always underpinned by that saline acidity that is our signature. A cuvée of balance.
