Biodynamics is a holistic approach to the vine and the soil, which sees the estate as a living organism. Beyond organic, it adds plant preparations, a lunar calendar and close observation of living things.
At the Manoir, we began this path in the early 2000s, certified Biodyvin in 2010 — a label that monitors our practices both in the vineyard AND in the cellar.
In the vineyard

Preparations
Preparations 500 and 501 (horn manure and horn silica) to stimulate microbial life and photosynthesis. Infusions of nettle, horsetail, yarrow and valerian to support the vine's defences.

Lunar calendar
Work synchronised with the lunar cycles — leaf, fruit, flower and root days. An attention to timing that, alongside practical constraints, helps us find the right moment.

Living soils
Light mechanical work, controlled grass cover, green-manure sowing. No weedkiller, no chemical fertiliser. Copper and sulphur only, in very low doses.

In the cellar
Biodynamics does not stop at the vine. In the cellar, we follow a strict charter: minimal intervention, indigenous yeasts, limited sulphites.
Spontaneous fermentation with the natural yeasts of the grape and the cellar.
Total SO₂ well below the Biodyvin limits, often half that of organic.
No enzymes, no added tannins, no wood chips, no flavourings.
Concrete tanks and old barrels, 12 to 24 months depending on the cuvée.
Bottling chosen on a descending fruit or flower day, to preserve the wine's energy.
Light filtration only if necessary — otherwise bottled unfiltered to keep all the substance.
The certification
Biodyvin (the International Union of Biodynamic Winegrowers) is the most demanding label in biodynamic viticulture. It monitors our practices both in the vineyard AND in the cellar, every year.
