A small plot dedicated to Pineau d'Aunis, a rare and historic Loire grape that was nearly lost. Planted to preserve and keep alive this mischievous, naturally peppery variety, vinified with a short maceration to retain its freshness.

Manual harvesting. Short semi-carbonic maceration to preserve the fruit and peppery character. Spontaneous fermentation. Bottled without fining or filtration.

Pineau d'Aunis is a grape variety we almost lost. I wanted to pay homage to it with this cuvée, which embraces its freshness, peppery notes, and lightness. Serve chilled, without ceremony. A cuvée that reflects me – a little impudent, but sincere.
