An emblematic single vineyard of the estate, on clay-limestone soils rich in flint at the foot of Puy Notre-Dame. Old vines planted in the 1970s, farmed under certified Biodyvin biodynamics. The flint gives the wines a rare mineral, saline tension.

Hand-picked grapes sorted into small crates. Gentle pressing. Spontaneous fermentation at low temperature. Light stirring of the lees. Bottling without fining or filtration.

Deep nose of gunflint, acacia honey, and candied lemon.
Dense, direct palate, supported by chiseled acidity and a saline length reminiscent of iodine.
A persistent, accomplished expression of terroir-driven Chenin.

Enchentoir is my laboratory, my reference plot. The flint there gives Chenin a mineral tension found nowhere else. I age this cuvée in old barrels, slowly, listening to it. It improves with age.
